Ingredients

  • 2 sleeves graham crackers
  • 1ยฝโ€“2 cups strongly brewed espresso or coffee, cooled
  • 8 ounces mascarpone cheese, softened
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1ยฝ cups heavy whipping cream, cold
  • 1 cup semi-sweet chocolate chips
  • ยฝ cup heavy cream
  • Unsweetened cocoa powder for dusting (optional)


Instructions

  1. Brew strong espresso or coffee and allow it to cool completely.
  2. Beat mascarpone and cream cheese until smooth.
  3. Add powdered sugar and vanilla extract and mix until combined.
  4. Whip heavy cream until stiff peaks form.
  5. Gently fold whipped cream into mascarpone mixture.
  6. Quickly dip graham crackers into cooled coffee for 1โ€“2 seconds per side.
  7. Arrange a layer of dipped graham crackers in a 9ร—13-inch dish.
  8. Spread half of the cream filling evenly over the crackers.
  9. Repeat with another layer of dipped graham crackers.
  10. Spread remaining cream filling on top and smooth evenly.
  11. Heat heavy cream until steaming and pour over chocolate chips.
  12. Let sit 2โ€“3 minutes, then stir until smooth to create ganache.
  13. Spread ganache evenly over the top layer.
  14. Cover and refrigerate at least 6 hours or overnight.
  15. Dust with cocoa powder before serving if desired.
