Description

This Easy Taco Soup is a cozy, hearty, one-pot meal perfect for busy families. Loaded with beef, beans, tomatoes, and classic taco spices, it delivers bold flavor with minimal effort and everyday pantry ingredients.


Ingredients

  • 1 Tbsp olive oil
  • 1 lb ground beef
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup frozen corn
  • 2 cans diced tomatoes with green chiles (10 oz each)
  • 1 can pinto beans, drained (15 oz)
  • 1 can black beans, drained (15 oz)
  • 1 packet taco seasoning
  • 1 packet ranch seasoning
  • 3 Tbsp tomato paste
  • 2 cups water


Instructions

  1. Heat olive oil in a large soup pot over medium heat and brown the ground beef, breaking it into crumbles. Drain excess fat if needed.
  2. Add diced onion and minced garlic, cooking until the onion is soft and translucent.
  3. Stir in frozen corn, pinto beans, black beans, and diced tomatoes with green chiles.
  4. Add taco seasoning, ranch seasoning, and tomato paste, mixing well until the paste dissolves.
  5. Pour in water, bring to a boil, then reduce heat and simmer for about 15 minutes.
  6. Taste and adjust seasoning if needed, then serve with your favorite taco toppings.

Notes

Brown the beef fully for richer flavor, choose mild or spicy tomatoes depending on heat preference, and add broth instead of water for deeper flavor if desired.
