Ingredients

  • 1 cup finely chopped fresh parsley
  • 1/4 cup finely chopped fresh mint
  • 1 cup diced tomatoes, seeds removed
  • 3 green onions, thinly sliced
  • 1/4 cup fine bulgur wheat
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra-virgin olive oil
  • 3/4 teaspoon salt
  • 1/4 teaspoon allspice
  • 1/8 teaspoon ground cinnamon


Instructions

  1. Place the fine bulgur wheat in a small bowl and cover with hot water. Let soak for 10 minutes, then drain well and squeeze out excess liquid.
  2. Finely chop the parsley and mint, dice the tomatoes, and thinly slice the green onions.
  3. Add the drained bulgur, parsley, mint, tomatoes, and green onions to a large bowl and toss gently.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, allspice, and cinnamon.
  5. Pour the dressing over the salad, toss gently, and let rest for 10 to 15 minutes before serving.

Notes
