Ingredients

  • 2 pounds ground beef (80โ€“85% lean)
  • 1 cup Italian-style breadcrumbs
  • 2 large eggs
  • 2 cups shredded Romano or Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 8โ€“10 slices mozzarella cheese
  • 2 cups fresh spinach, roughly chopped
  • 8 ounces sliced deli ham
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese


Instructions

  1. Preheat the oven to 350ยฐF and line a rimmed baking sheet with parchment paper.
  2. In a large bowl, gently mix ground beef, breadcrumbs, eggs, Romano cheese, garlic, salt, Italian seasoning, and black pepper.
  3. Press the meat mixture into a large rectangle about 1 inch thick on parchment paper.
  4. Layer ham evenly over the meat, followed by spinach and mozzarella slices.
  5. Carefully roll the meatloaf into a log and seal the seams and ends.
  6. Transfer seam-side down to the baking sheet and bake for 60 minutes.
  7. Remove from oven, spread marinara sauce on top, and sprinkle with shredded mozzarella.
  8. Return to the oven and bake for 15 minutes until cheese is melted and bubbly.
  9. Let rest for 10 minutes before slicing and serving.
