Description

A bright and refreshing salad made with sweet strawberries, tender spring mix greens, crunchy nuts, creamy cheese, and a simple homemade vinaigrette. Perfect for spring and summer meals.


Ingredients

  • 6 cups spring mix salad greens
  • 2 cups fresh strawberries, hulled and sliced
  • 3/4 cup pecans or walnuts, roughly chopped
  • 1/3 cup crumbled feta cheese or goat cheese
  • 1/4 cup thinly sliced red onion (optional)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar or apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Place the chopped nuts in a dry skillet over medium heat and toast for 3–5 minutes, stirring often, until fragrant and lightly golden. Remove from heat and let cool.
  2. Wash and dry the spring mix thoroughly. Hull and slice the strawberries, and thinly slice the red onion if using.
  3. In a small bowl or jar, whisk together olive oil, vinegar, honey, salt, and black pepper until well combined.
  4. Add the spring mix to a large bowl and drizzle with half of the dressing. Toss gently to coat.
  5. Top with strawberries, toasted nuts, cheese, and red onion. Drizzle with remaining dressing and toss lightly.
  6. Serve immediately for best freshness and texture.

Notes

Dry the greens well before assembling. For best results, store the dressing separately and toss the salad just before serving.
