Description

Soft, bakery-style strawberry cheesecake cookies with a creamy texture and sweet strawberry bursts. These cookies are easy to make, perfectly balanced between sweet and tangy, and ideal for parties, holidays, or everyday treats.


Ingredients

  • 2ยผ cups all-purpose flour
  • ยฝ teaspoon baking powder
  • ยฝ teaspoon salt
  • ยฝ cup unsalted butter, softened
  • 4 ounces cream cheese, softened
  • ยพ cup granulated sugar
  • ยผ cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ยพ cup chopped fresh strawberries or ยฝ cup freeze-dried strawberries
  • ยฝ cup white chocolate chips (optional)


Instructions

  1. Preheat oven to 350ยฐF and line baking sheets with parchment paper.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. Beat butter and cream cheese until smooth and creamy.
  4. Add granulated sugar and brown sugar and beat until light and fluffy.
  5. Mix in egg and vanilla extract until combined.
  6. Gradually add dry ingredients and mix until just combined.
  7. Fold in strawberries and white chocolate chips if using.
  8. Scoop dough onto baking sheets, spacing cookies apart.
  9. Bake for 12โ€“14 minutes until edges are set and centers are soft.
  10. Cool briefly on the pan, then transfer to a wire rack.

Notes

Pat fresh strawberries very dry before using to avoid excess moisture. Do not overbake, as the cookies will continue to set while cooling.
