Ingredients
- 1 cup stone-ground grits
- 4 cups water
- 1/2 teaspoon salt
- 2 tablespoons butter
- 1/2 cup milk
- 1 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 small jalapeño, finely minced
- 2 green onions, thinly sliced
- 2 tablespoons chopped fresh cilantro
- 6 large eggs
- 1 tablespoon olive oil or butter
- Salt and black pepper, to taste
Instructions
- Bring the water and salt to a boil in a medium saucepan.
- Slowly whisk in the grits to prevent lumps.
- Reduce heat to low and simmer, stirring frequently, for 25 to 30 minutes until smooth and tender.
- Stir in butter and milk until fully incorporated.
- Add cheddar and Parmesan cheese and stir until melted and creamy.
- Mix in jalapeño, green onions, and cilantro, then adjust seasoning if needed.
- Heat olive oil or butter in a nonstick skillet over medium heat.
- Crack eggs into the skillet, season with salt and black pepper, and cook until desired doneness.
