Ingredients

  • 1 cup stone-ground grits
  • 4 cups water
  • 1/2 teaspoon salt
  • 2 tablespoons butter
  • 1/2 cup milk
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 small jalapeño, finely minced
  • 2 green onions, thinly sliced
  • 2 tablespoons chopped fresh cilantro
  • 6 large eggs
  • 1 tablespoon olive oil or butter
  • Salt and black pepper, to taste


Instructions

  1. Bring the water and salt to a boil in a medium saucepan.
  2. Slowly whisk in the grits to prevent lumps.
  3. Reduce heat to low and simmer, stirring frequently, for 25 to 30 minutes until smooth and tender.
  4. Stir in butter and milk until fully incorporated.
  5. Add cheddar and Parmesan cheese and stir until melted and creamy.
  6. Mix in jalapeño, green onions, and cilantro, then adjust seasoning if needed.
  7. Heat olive oil or butter in a nonstick skillet over medium heat.
  8. Crack eggs into the skillet, season with salt and black pepper, and cook until desired doneness.
  9. Spoon grits into bowls and top with fried eggs.
  10. Serve immediately while hot.
