Ingredients
- 1 lb boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 3 cloves garlic, minced
- 2 cups low sodium chicken broth
- 1 cup heavy cream
- 8 oz egg noodles
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh parsley (optional)
Instructions

- Heat olive oil in a large skillet over medium heat and cook the chicken until golden and cooked through, then remove and set aside.
- Add butter to the same skillet and melt over medium low heat.
- Stir in the garlic and cook briefly until fragrant.
- Pour in the chicken broth and scrape up any browned bits.
- Stir in the heavy cream and bring to a gentle simmer.
- Add the egg noodles, cover, and cook until tender and the sauce thickens.
- Stir in the Parmesan cheese until melted.
- Slice the chicken and return it to the pan, warming through before serving.
Notes
Use a wide, deep skillet so the noodles cook evenly. Add a splash of broth if the sauce becomes too thick while cooking.
