Description

A fun, fast, and delicious recipe that combines juicy cheeseburger flavors with crispy quesadillas, melty cheese, seasoned beef, and a simple homemade special sauce.


Ingredients

  • 1 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon pickle juice
  • 1 teaspoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 1 pound ground beef
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • Dill pickle chips (optional)
  • Iceberg lettuce wedges (optional)
  • Cherry tomatoes (optional)
  • Thinly sliced shallots (optional)


Instructions

  1. Mix mayonnaise, ketchup, pickle juice, mustard, Worcestershire sauce, salt, and pepper in a bowl to make the special sauce. Refrigerate.
  2. Cook ground beef in a skillet with salt, pepper, and garlic powder until browned. Drain excess grease.
  3. Lay tortillas flat and add shredded cheese on half of each. Add cooked beef, optional pickles, and more cheese. Fold into half-moons.
  4. Cook each quesadilla in a skillet over medium heat for 2โ€“3 minutes per side until golden and melted.
  5. Let rest briefly, slice into wedges, and serve with special sauce.

Notes

Use medium heat for even melting. Do not overfill quesadillas. Brush tortillas lightly with oil for extra crispiness. Add onions to beef for added flavor. Double the special sauce for extra servings.
