Description

Amazing shrimp and crab alfredo lasagna roll-ups are a creamy, comforting seafood dinner made with tender shrimp, sweet crab, rich alfredo sauce, and cheesy filling rolled neatly inside lasagna noodles.


Ingredients

  • 9 lasagna noodles
  • 1 cup cooked shrimp, peeled, deveined, and chopped
  • 1 cup crab meat, drained and picked over
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 cups alfredo sauce, divided
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped fresh parsley, optional


Instructions

  1. Cook lasagna noodles in salted boiling water until al dente, then drain and lay flat.
  2. Melt butter in a skillet over medium heat and sautรฉ garlic for 30 seconds until fragrant.
  3. Add chopped shrimp, Italian seasoning, salt, and black pepper and cook 2 to 3 minutes until just cooked through.
  4. In a large bowl, combine ricotta cheese, half of the mozzarella, Parmesan cheese, 1 cup alfredo sauce, cooked shrimp, and crab meat.
  5. Spread a thin layer of remaining alfredo sauce in a greased baking dish.
  6. Spread filling evenly over each lasagna noodle, roll up, and place seam side down in the dish.
  7. Pour remaining alfredo sauce over the roll-ups and sprinkle with remaining mozzarella.
  8. Cover with foil and bake at 375ยฐF for 25 minutes.
  9. Remove foil and bake 10 minutes until cheese is melted and bubbly.
  10. Let rest 5 minutes before serving and garnish with parsley if desired.

Notes

Do not overcook the shrimp before baking, as they will continue cooking in the oven and stay tender.
