Description
Amazing shrimp and crab alfredo lasagna roll-ups are a creamy, comforting seafood dinner made with tender shrimp, sweet crab, rich alfredo sauce, and cheesy filling rolled neatly inside lasagna noodles.
Ingredients
- 9 lasagna noodles
- 1 cup cooked shrimp, peeled, deveined, and chopped
- 1 cup crab meat, drained and picked over
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 2 cups alfredo sauce, divided
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Chopped fresh parsley, optional
Instructions
- Cook lasagna noodles in salted boiling water until al dente, then drain and lay flat.
- Melt butter in a skillet over medium heat and sautรฉ garlic for 30 seconds until fragrant.
- Add chopped shrimp, Italian seasoning, salt, and black pepper and cook 2 to 3 minutes until just cooked through.
- In a large bowl, combine ricotta cheese, half of the mozzarella, Parmesan cheese, 1 cup alfredo sauce, cooked shrimp, and crab meat.
- Spread a thin layer of remaining alfredo sauce in a greased baking dish.
- Spread filling evenly over each lasagna noodle, roll up, and place seam side down in the dish.
- Pour remaining alfredo sauce over the roll-ups and sprinkle with remaining mozzarella.
- Cover with foil and bake at 375ยฐF for 25 minutes.
- Remove foil and bake 10 minutes until cheese is melted and bubbly.
- Let rest 5 minutes before serving and garnish with parsley if desired.
Notes
Do not overcook the shrimp before baking, as they will continue cooking in the oven and stay tender.
