Ingredients
- 1ยฝ pounds flank steak
- 2 pounds red potatoes, quartered
- 1 pound asparagus, trimmed
- 3โ4 garlic cloves, minced
- 4โ5 tablespoons grated Parmesan cheese
- 3ยฝ tablespoons olive oil
- 1 teaspoon cracked black pepper
- 1/2 teaspoon sea salt
- 1 teaspoon dried parsley
Instructions
- Preheat broiler on high. Toss potatoes with olive oil, Parmesan, garlic, parsley, pepper, and salt. Spread on a sheet pan and broil 6โ8 minutes until lightly golden.
- Pat steak dry and rub with olive oil, garlic, salt, pepper, and Parmesan.
- Remove pan, push potatoes aside, and place steak in the center. Add asparagus with olive oil, salt, pepper, and Parmesan.
- Broil 4โ6 minutes per side or until steak reaches desired doneness. Vegetables should be crisp and golden.
- Rest steak 5 minutes, then slice against the grain. Serve with potatoes and asparagus.
