Description

Cozy Sausage Potato Soup for Chilly Nights is a creamy, hearty soup made with tender potatoes, savory sausage, and a rich broth that is perfect for warming up on cold evenings.


Ingredients

  • 1 lb smoked turkey sausage or chicken sausage, sliced
  • 2 tbsp butter
  • 1 small yellow onion, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1.5 lb Yukon Gold potatoes, peeled and diced
  • 3 cups chicken broth
  • 2 cups whole milk
  • 0.5 cup heavy cream
  • 3 tbsp all-purpose flour
  • 0.75 tsp salt, or to taste
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.25 tsp dried thyme
  • Shredded cheddar cheese, optional
  • Chopped parsley or green onions, optional


Instructions

  1. In a large pot, cook sliced sausage over medium heat until lightly browned. Remove and set aside.
  2. In the same pot, melt butter and add onion and celery. Cook until softened.
  3. Add garlic and cook briefly until fragrant.
  4. Sprinkle flour over the vegetables and stir well, cooking for 1 minute.
  5. Slowly pour in chicken broth while stirring to avoid lumps.
  6. Add diced potatoes, salt, pepper, paprika, and thyme. Bring to a gentle simmer.
  7. Cook until potatoes are fork-tender.
  8. Stir in milk and heavy cream, then return sausage to the pot.
  9. Simmer gently for a few minutes until thickened and heated through.
  10. Taste and adjust seasoning, then serve topped with cheese or herbs if desired.

Notes

For a lighter soup, use milk only and skip the cream. Simmer gently to prevent curdling.
