Ingredients
- 1 lb smoked turkey sausage or chicken sausage, sliced
- 2 tbsp butter
- 1 small yellow onion, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1.5 lb Yukon Gold potatoes, peeled and diced
- 3 cups chicken broth
- 2 cups whole milk
- 0.5 cup heavy cream
- 3 tbsp all-purpose flour
- 0.75 tsp salt, or to taste
- 0.5 tsp black pepper
- 0.5 tsp paprika
- 0.25 tsp dried thyme
- Shredded cheddar cheese, optional
- Chopped parsley or green onions, optional
Instructions
- In a large pot, cook sliced sausage over medium heat until lightly browned. Remove and set aside.
- In the same pot, melt butter and add onion and celery. Cook until softened.
- Add garlic and cook briefly until fragrant.
- Sprinkle flour over the vegetables and stir well, cooking for 1 minute.
- Slowly pour in chicken broth while stirring to avoid lumps.
- Add diced potatoes, salt, pepper, paprika, and thyme. Bring to a gentle simmer.
- Cook until potatoes are fork-tender.
- Stir in milk and heavy cream, then return sausage to the pot.
- Simmer gently for a few minutes until thickened and heated through.
- Taste and adjust seasoning, then serve topped with cheese or herbs if desired.
Notes
For a lighter soup, use milk only and skip the cream. Simmer gently to prevent curdling.
