Ingredients
- 2 salmon fillets (about 4 oz each)
- 2 cups broccoli florets
- 2 cups cooked rice (white, brown, or jasmine)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 garlic clove, minced
- 1 tsp fresh ginger, grated
- 1 tbsp olive oil
- Salt and pepper, to taste
- Optional toppings: avocado slices, scallions, sesame seeds, or sriracha
Instructions
- Preheat oven to 375ยฐF (190ยฐC) and line a baking sheet with parchment paper.
- In a bowl, whisk together soy sauce, sesame oil, garlic, and ginger to make a marinade.
- Coat salmon fillets in the marinade and let sit for 15 minutes.
- Toss broccoli florets in olive oil, salt, and pepper, then spread them on the baking sheet beside the salmon.
- Bake for 12โ15 minutes, until salmon flakes easily and broccoli is tender-crisp.
- Meanwhile, cook rice according to package directions and fluff with a fork.
- Assemble bowls by layering rice, roasted broccoli, and salmon.
