Ingredients

  • 1 whole beef tenderloin, 4 to 5 pounds, trimmed and tied
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons avocado oil or olive oil
  • 6 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons prepared horseradish or Dijon mustard
  • 1 tablespoon fresh rosemary or thyme, finely chopped
  • 1 teaspoon salt


Instructions

  1. Remove beef tenderloin from refrigerator and let rest at room temperature.
  2. Pat dry and season all sides with salt and black pepper.
  3. Preheat oven to 425°F.
  4. Heat oil in a large oven-safe skillet over medium-high heat.
  5. Sear tenderloin on all sides until deeply golden.
  6. Mix butter, garlic, horseradish or mustard, herbs, and salt.
  7. Spread garlic herb butter over the seared tenderloin.
  8. Transfer skillet to oven and roast until desired doneness.
  9. Remove from oven and rest loosely covered with foil.
  10. Remove twine, slice, and serve.

Notes

Use a meat thermometer for best results. Let the beef rest before slicing to keep it juicy. Tie evenly for uniform cooking.
