Ingredients
- 1 whole beef tenderloin, 4 to 5 pounds, trimmed and tied
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 tablespoons avocado oil or olive oil
- 6 tablespoons unsalted butter, softened
- 4 cloves garlic, minced
- 2 tablespoons prepared horseradish or Dijon mustard
- 1 tablespoon fresh rosemary or thyme, finely chopped
- 1 teaspoon salt
Instructions
- Remove beef tenderloin from refrigerator and let rest at room temperature.
- Pat dry and season all sides with salt and black pepper.
- Preheat oven to 425°F.
- Heat oil in a large oven-safe skillet over medium-high heat.
- Sear tenderloin on all sides until deeply golden.
- Mix butter, garlic, horseradish or mustard, herbs, and salt.
- Spread garlic herb butter over the seared tenderloin.
- Transfer skillet to oven and roast until desired doneness.
- Remove from oven and rest loosely covered with foil.
- Remove twine, slice, and serve.
