  • 4 cups whole milk
  • 1 cup heavy cream
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon (optional)

  • ½ cup raisins (optional)

Instructions

  • Rinse the rice under cold water until the water runs clear.
  • In a large saucepan, combine the rice, milk, heavy cream, sugar, and salt. Stir well.
  • Bring the mixture to a gentle boil over medium heat, stirring frequently to prevent sticking.
  • Reduce heat to low and let it simmer, stirring occasionally, until the rice is tender and the mixture thickens (about 25-30 minutes).
  • Remove from heat and stir in the vanilla extract and cinnamon (if using).
  • If adding raisins, fold them in while the pudding is still warm.
  • Let the pudding cool slightly before serving. It will thicken as it cools.

 

  • Serve warm or chilled, garnished with a sprinkle of nutmeg.

Notes

  • For extra flavor, add a cinnamon stick while cooking and remove it before serving.
