Ingredients

  • Fresh raspberries
  • 8 oz cream cheese (softened)
  • 2 tbsp honey or powdered sugar
  • 1/2 tsp vanilla extract
  • 12 mini phyllo shells, puff pastry squares, or graham cracker crust cups
  • Optional: fresh mint, shaved chocolate, or slivered almonds for garnish


Instructions

  1. Prepare your base: bake puff pastry squares or ready mini phyllo shells until golden if needed.
  2. In a mixing bowl, beat softened cream cheese, honey or powdered sugar, and vanilla extract until smooth and fluffy.
  3. Spoon or pipe the cream cheese mixture into each shell, filling about three-quarters full.
  4. Top each with one or two fresh raspberries.
  5. Chill for at least 30 minutes to firm up and let flavors meld.
