Ingredients

Scale

For the Brownies:

  • 1 cup (226g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1 cup (200g) brown sugar, packed
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (120g) all-purpose flour
  • ½ cup (50g) unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking powder

For the Pecan Pie Topping:

  • ¾ cup (150g) brown sugar, packed
  • ½ cup (120ml) light corn syrup
  • ¼ cup (56g) unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 ½ cups (180g) pecans, roughly chopped

Instructions

  • Preheat the Oven: Set your oven to 350°F (175°C). Grease a 9×13-inch baking dish and line it with parchment paper for easy removal.

  • Make the Brownie Batter:

    • In a large bowl, whisk together melted butter, granulated sugar, and brown sugar.
    • Add eggs and vanilla extract, mixing until smooth.
    • Sift in flour, cocoa powder, salt, and baking powder. Stir until just combined.
    • Pour the batter into the prepared baking dish and spread evenly.
  • Partially Bake the Brownies: Place the brownies in the oven and bake for 20 minutes until they are just set. Remove from the oven but keep the oven on.

  • Prepare the Pecan Pie Topping:

    • In a medium bowl, whisk together brown sugar, corn syrup, melted butter, eggs, vanilla extract, and salt.
    • Fold in the chopped pecans.
  • Add the Pecan Pie Layer: Carefully pour the pecan pie mixture over the partially baked brownies, spreading it evenly.

  • Bake Again: Return the pan to the oven and bake for 25-30 minutes until the pecan topping is set and slightly golden.

  • Cool Completely: Let the brownies cool in the pan for at least 2 hours before slicing. For best results, refrigerate for 1 hour before cutting to get clean slices.

  • Serve & Enjoy! Cut into squares and enjoy your rich, gooey Pecan Pie Brownies!

Notes

  • For extra chocolatey flavor, add ½ cup of chocolate chips to the brownie batter.
  • Use dark corn syrup instead of light for a deeper caramel flavor.
  • Store leftovers in an airtight container at room temperature for 3 days or in the fridge for up to a week.
