Description

A tropical twist on the classic cheesecake combining creamy richness with the tangy, alluring flavor of passion fruit.


Ingredients

  • 200g graham crackers (or digestive biscuits)
  • 100g melted butter
  • 600g cream cheese, softened
  • 200g granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 150ml passion fruit pulp (fresh or canned)
  • 1 tbsp cornstarch (optional)
  • 150ml passion fruit pulp for glaze
  • 2 tbsp sugar (for glaze)
  • 1 tsp cornstarch (for glaze)


Instructions

  1. Preheat oven to 325ยฐF (160ยฐC).
  2. Crush graham crackers and mix with melted butter to form the crust. Press into the base of a springform pan and bake for 10 minutes.
  3. Beat cream cheese until smooth, then add sugar, eggs, and vanilla extract one at a time.
  4. Fold in passion fruit pulp gently until fully combined.
  5. Pour filling over the cooled crust and bake in a water bath for 50-60 minutes.
  6. Turn off the oven, let the cheesecake cool inside for 1 hour, then refrigerate for at least 4 hours or overnight.
  7. For the glaze, heat passion fruit pulp, sugar, and cornstarch until thickened. Spread over the chilled cheesecake.
  8. Garnish with fresh passion fruit seeds or slices before serving.

Notes

Use room-temperature ingredients for a smooth filling. Donโ€™t overmix to avoid cracks. Chill thoroughly before serving for best texture and flavor.
