Ingredients
- 3–4 boneless, skinless chicken breasts (about 1.5 lb)
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- ¾ cup grated Parmesan cheese
- ½ cup breadcrumbs (Italian or plain)
- ½ teaspoon sea salt
- ½ teaspoon black pepper
- 1 lb red potatoes, quartered
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- ¼ cup grated Parmesan cheese
- Salt and pepper, to taste
- 12 ounces fresh green beans, trimmed
- 1 tablespoon olive oil
- 1–2 cloves garlic, minced
- Salt and pepper, to taste
Instructions
- Preheat oven to 425°F (220°C). Lightly grease a large sheet pan or line it with parchment.
- Toss potatoes with olive oil, garlic, Parmesan, salt, and pepper. Spread on one-third of the pan and bake 15 minutes.
- Mix olive oil and garlic in a dish. In another bowl, mix Parmesan, breadcrumbs, salt, and pepper.
- Dip chicken in garlic oil, then press into Parmesan mixture to coat.
- Remove sheet pan from oven. Add coated chicken next to potatoes.
- Toss green beans with olive oil, garlic, salt, and pepper; spread onto remaining space on the sheet pan.
- Bake 25 minutes or until chicken reaches 165°F (74°C).
- Broil 2–4 minutes for extra crispiness if desired.
- Let chicken rest 5 minutes before serving.
Notes
Use freshly grated Parmesan for the crispiest crust. Avoid overcrowding the pan so everything roasts well. Slice thick chicken breasts horizontally for even cooking.
