This Simple One-Pot Creamy Meatball Soup Recipe is a comforting, family-friendly dinner made with tender meatballs, hearty vegetables, pasta, and a rich creamy broth, all cooked together in one pot for easy cleanup.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 6 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Black pepper, to taste
  • 1 pound frozen or homemade meatballs
  • 1 cup small pasta (ditalini or small shells)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh parsley or basil, for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, carrots, and celery and cook for 4 to 5 minutes until softened.
  3. Stir in garlic and Italian seasoning and cook for 30 seconds until fragrant.
  4. Pour in chicken broth and bring to a gentle boil.
  5. Add meatballs, reduce heat, and simmer for 8 to 10 minutes.
  6. Stir in pasta and continue simmering for 8 to 10 minutes until pasta is tender.
  7. Lower heat and slowly stir in heavy cream.
  8. Add Parmesan cheese and stir until melted and creamy.
  9. Taste and adjust seasoning with salt and pepper.
  10. Garnish with fresh parsley or basil and serve warm.

Notes

Add cream and cheese over low heat to keep the soup smooth. If the soup thickens too much, add extra broth to reach the desired consistency.
