Description

A comforting one-pan dinner made with tender chicken, buttery egg noodles, and savory broth all cooked together in a single skillet. Simple, cozy, and perfect for busy weeknights with minimal cleanup.


Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts or thighs
  • 2 tablespoons butter, divided
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth, preferably low sodium
  • 8 ounces egg noodles
  • 1/2 teaspoon poultry seasoning or Italian seasoning
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)


Instructions

  1. Season the chicken on both sides with salt, black pepper, and poultry seasoning.
  2. Heat 1 tablespoon of butter in a large deep skillet over medium heat.
  3. Add the chicken and cook for 4 to 5 minutes per side until lightly golden. Remove and set aside.
  4. Add the remaining tablespoon of butter to the skillet.
  5. Add the chopped onion and cook for 3 to 4 minutes until softened.
  6. Stir in the garlic and cook for about 30 seconds until fragrant.
  7. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan.
  8. Bring to a gentle simmer and add the egg noodles, stirring to submerge them.
  9. Return the chicken to the skillet with the noodles.
  10. Cover, reduce heat to medium-low, and simmer for 10 to 12 minutes, stirring occasionally.
  11. Remove the lid once noodles are tender and sauce is glossy.
  12. Taste, adjust seasoning if needed, garnish with parsley, and serve warm.

Notes

Use a wide skillet for even noodle cooking and stir occasionally to prevent sticking. Add a splash of broth when reheating if needed.
