Description
A comforting one-pan dinner made with tender chicken, buttery egg noodles, and savory broth all cooked together in a single skillet. Simple, cozy, and perfect for busy weeknights with minimal cleanup.
Ingredients
- 1 1/2 pounds boneless skinless chicken breasts or thighs
- 2 tablespoons butter, divided
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 4 cups chicken broth, preferably low sodium
- 8 ounces egg noodles
- 1/2 teaspoon poultry seasoning or Italian seasoning
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Season the chicken on both sides with salt, black pepper, and poultry seasoning.
- Heat 1 tablespoon of butter in a large deep skillet over medium heat.
- Add the chicken and cook for 4 to 5 minutes per side until lightly golden. Remove and set aside.
- Add the remaining tablespoon of butter to the skillet.
- Add the chopped onion and cook for 3 to 4 minutes until softened.
- Stir in the garlic and cook for about 30 seconds until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the pan.
- Bring to a gentle simmer and add the egg noodles, stirring to submerge them.
- Return the chicken to the skillet with the noodles.
- Cover, reduce heat to medium-low, and simmer for 10 to 12 minutes, stirring occasionally.
- Remove the lid once noodles are tender and sauce is glossy.
- Taste, adjust seasoning if needed, garnish with parsley, and serve warm.
Notes
Use a wide skillet for even noodle cooking and stir occasionally to prevent sticking. Add a splash of broth when reheating if needed.
