Description

Easy One Pan Balsamic Chicken Dinner is a flavorful weeknight meal made with juicy chicken, tender vegetables, and a sweet and tangy balsamic glaze, all cooked together in one pan.


Ingredients

  • 1.5 lb boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 0.75 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning
  • 1.5 cups cherry tomatoes
  • 1.5 cups green beans or asparagus, trimmed
  • 3 cloves garlic, minced
  • 0.33 cup balsamic vinegar
  • 2 tbsp honey or brown sugar
  • 1 tbsp olive oil
  • Fresh basil or parsley (optional)
  • Extra cracked black pepper (optional)


Instructions

  1. Pat chicken dry and season both sides with salt, black pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium heat and sear chicken until lightly golden on both sides. Remove and set aside.
  3. Whisk balsamic vinegar, honey, and olive oil together in a small bowl.
  4. Add garlic to the pan and cook briefly until fragrant.
  5. Add cherry tomatoes and green beans, stirring to coat.
  6. Return chicken to the pan and pour balsamic sauce over everything.
  7. Cover and simmer until chicken is cooked through and sauce thickens slightly.
  8. Uncover, spoon sauce over chicken, garnish if desired, and serve warm.

Notes

Use a wide pan so the balsamic sauce reduces properly and avoid overcrowding the vegetables for best texture.
