Easy One Pan Balsamic Chicken Dinner is a flavorful weeknight meal made with juicy chicken, tender vegetables, and a sweet and tangy balsamic glaze, all cooked together in one pan.
Ingredients
- 1.5 lb boneless, skinless chicken breasts or thighs
- 1 tbsp olive oil
- 0.75 tsp salt
- 0.5 tsp black pepper
- 1 tsp Italian seasoning
- 1.5 cups cherry tomatoes
- 1.5 cups green beans or asparagus, trimmed
- 3 cloves garlic, minced
- 0.33 cup balsamic vinegar
- 2 tbsp honey or brown sugar
- 1 tbsp olive oil
- Fresh basil or parsley (optional)
- Extra cracked black pepper (optional)
Instructions
- Pat chicken dry and season both sides with salt, black pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium heat and sear chicken until lightly golden on both sides. Remove and set aside.
- Whisk balsamic vinegar, honey, and olive oil together in a small bowl.
- Add garlic to the pan and cook briefly until fragrant.
- Add cherry tomatoes and green beans, stirring to coat.
- Return chicken to the pan and pour balsamic sauce over everything.
- Cover and simmer until chicken is cooked through and sauce thickens slightly.
- Uncover, spoon sauce over chicken, garnish if desired, and serve warm.
Notes
Use a wide pan so the balsamic sauce reduces properly and avoid overcrowding the vegetables for best texture.
