Description

These family favorite mini sausage pancake muffins combine fluffy pancake texture with savory sausage in a fun, bite-sized breakfast that is perfect for busy mornings, meal prep, or weekend brunch.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon granulated sugar
  • 1 cup milk
  • 1 large egg
  • 1 tablespoon butter, melted
  • 1 pound breakfast sausage, cooked and crumbled


Instructions

  1. Preheat oven to 400°F and grease a mini muffin tin.
  2. Cook breakfast sausage in a skillet until browned and crumbled, then drain excess grease.
  3. In a bowl, whisk together flour, baking powder, baking soda, and sugar.
  4. In a separate bowl, whisk milk, egg, and melted butter until smooth.
  5. Add wet ingredients to dry ingredients and stir gently until just combined.
  6. Fill mini muffin cups about three-quarters full with batter.
  7. Sprinkle cooked sausage evenly into each muffin cup.
  8. Bake for 10–12 minutes until lightly golden and a toothpick comes out clean.
  9. Cool slightly before removing and serve warm.

Notes

Do not overmix the batter to keep muffins light and fluffy. Let sausage cool slightly before adding to batter.
