Description

Easy Marinated Chickpeas with Whipped Feta is a bright, Mediterranean-inspired dish that delivers bold flavor with minimal effort. • ยผ cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley

  • ยฝ teaspoon salt
  • ยผ teaspoon black pepper
  • 8 ounces feta cheese
  • ยฝ cup plain Greek yogurt

  • 1 tablespoon fresh lemon juice (for whipped feta)
  • ยผ teaspoon black pepper (for whipped feta)

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, red wine vinegar, minced garlic, parsley, dill, red pepper flakes, salt, and black pepper.
  2. Add the drained chickpeas and toss until evenly coated.
  3. Cover and refrigerate for at least 30 minutes, stirring occasionally.
  4. In a food processor or high-speed blender, combine feta cheese, Greek yogurt, olive oil, lemon juice, and black pepper.
  5. Blend until completely smooth and creamy, scraping down the sides as needed.
  6. Spread the whipped feta onto a serving plate or shallow bowl.
  7. Spoon the marinated chickpeas over the top, allowing some marinade to drizzle over.
  8. Garnish with extra herbs, red pepper flakes, and a drizzle of olive oil if desired.
  9. Serve immediately or chill until ready to enjoy.

Notes

Marinate chickpeas longer for deeper flavor. Use high-quality olive oil for best taste. Store chickpeas and whipped feta separately for up to 4 days. Let whipped feta sit at room temperature before serving if chilled.
