A fresh and vibrant salad made with juicy mango, crisp cucumber, sweet blueberries, creamy avocado, and a light citrusy dressing. Perfect for warm-weather meals and gatherings.
Ingredients
- 2 ripe mangos, peeled and diced
- 1 large English cucumber, sliced and quartered
- 1 1/2 cups fresh blueberries
- 1 large ripe avocado, diced
- 2 tablespoons fresh cilantro or mint, finely chopped
- 3 tablespoons fresh lime juice
- 2 tablespoons extra virgin olive oil
- 1 tablespoon honey or maple syrup
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Peel and dice the mangos into bite-sized pieces. Slice the cucumber lengthwise and cut into quarters. Rinse and dry the blueberries.
- In a small bowl or jar, whisk together lime juice, olive oil, honey, salt, and black pepper until well combined.
- Add the mango, cucumber, and blueberries to a large mixing bowl. Drizzle with the dressing and gently toss to coat.
- Carefully fold in the diced avocado and chopped herbs, tossing gently to avoid mashing.
- Serve immediately or refrigerate for up to 30 minutes before serving.
Notes
Add the avocado just before serving for best texture. Taste and adjust dressing seasoning since fruit sweetness may vary.
