Ingredients
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ⅔ cup milk
- ⅓ cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup mini chocolate chips
Instructions
- Preheat the oven to 350°F and lightly grease a mini muffin pan or line with mini liners.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk the milk, vegetable oil, egg, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently stir just until combined.
- Fold in the mini chocolate chips evenly.
- Fill each mini muffin cup about ¾ full with batter.
- Bake for 10–12 minutes until set and a toothpick comes out clean or with a few moist crumbs.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Do not overmix the batter to keep the muffins light and fluffy. Mini chocolate chips work best for even distribution. Store in an airtight container once fully cooled.
