Ingredients
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 medium onion, diced
- 2 celery stalks, chopped
- 2 medium carrots, sliced
- 3 cloves garlic, minced
- 1 tablespoon all purpose flour
- 6 cups low sodium chicken broth
- 1 pound boneless skinless chicken breasts
- 3/4 cup dry orzo pasta
- 1 teaspoon Italian seasoning
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil and butter in a large pot over medium heat.
- Add onion, carrots, and celery and cook until softened.
- Add garlic and cook briefly until fragrant.
- Sprinkle flour over vegetables and stir well.
- Slowly pour in chicken broth while stirring.
- Add chicken breasts, Italian seasoning, salt, and black pepper.
- Simmer until chicken is fully cooked.
- Stir in orzo and cook until tender.
- Remove chicken, shred or chop, then return to pot.
- Stir in fresh lemon juice and parsley.
- Taste and adjust seasoning before serving.
Notes
Add lemon juice at the end to keep the flavor bright. Stir orzo occasionally to prevent sticking.
