Description

Fresh Lemon Chicken Orzo Soup is a cozy, nourishing bowl made with tender chicken, delicate orzo pasta, and a bright lemony broth that feels comforting yet light.


Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 medium onion, diced
  • 2 celery stalks, chopped
  • 2 medium carrots, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon all purpose flour
  • 6 cups low sodium chicken broth
  • 1 pound boneless skinless chicken breasts
  • 3/4 cup dry orzo pasta
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Add onion, carrots, and celery and cook until softened.
  3. Add garlic and cook briefly until fragrant.
  4. Sprinkle flour over vegetables and stir well.
  5. Slowly pour in chicken broth while stirring.
  6. Add chicken breasts, Italian seasoning, salt, and black pepper.
  7. Simmer until chicken is fully cooked.
  8. Stir in orzo and cook until tender.
  9. Remove chicken, shred or chop, then return to pot.
  10. Stir in fresh lemon juice and parsley.
  11. Taste and adjust seasoning before serving.

Notes

Add lemon juice at the end to keep the flavor bright. Stir orzo occasionally to prevent sticking.
