Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup all purpose flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 10 ounces cremini or white mushrooms, sliced
  • 3/4 cup chicken stock
  • 1 tablespoon balsamic vinegar or lemon juice
  • 1 to 2 tablespoons white grape juice
  • Fresh parsley, chopped, optional


Instructions

  1. Pound the chicken breasts to an even thickness.
  2. Mix flour, salt, and black pepper and dredge the chicken lightly.
  3. Heat olive oil and butter in a large skillet and sear the chicken until golden and cooked through.
  4. Remove the chicken and keep warm.
  5. Add mushrooms to the skillet and cook until softened and golden.
  6. Pour in chicken stock, balsamic vinegar or lemon juice, and white grape juice.
  7. Simmer the sauce until slightly reduced.
  8. Return the chicken to the skillet and spoon sauce over the top.
  9. Simmer gently until flavors combine.
  10. Garnish with fresh parsley and serve.

Finish the chicken in the sauce to keep it moist and taste the sauce before serving to adjust seasoning if needed.
