Ingredients

  • 1ยฝ pounds fresh carrots
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • ยฝ teaspoon salt
  • ยผ teaspoon freshly ground black pepper
  • 1 cup whole milk ricotta cheese
  • 1 tablespoon olive oil (for ricotta)
  • 1 teaspoon lemon zest or 1 tablespoon fresh lemon juice
  • ยผ teaspoon salt (for ricotta)
  • Fresh thyme or chopped parsley (optional)
  • Crushed pistachios or walnuts (optional)
  • Red pepper flakes (optional)
  • Extra drizzle of honey (optional)
  • Lemon zest (optional)


Instructions

  1. Preheat oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
  2. Wash, peel, trim, and slice thick carrots lengthwise if needed.
  3. Place carrots on baking sheet.
  4. Drizzle with olive oil and honey.
  5. Sprinkle with salt and black pepper.
  6. Toss to coat evenly and spread in a single layer.
  7. Roast for 20โ€“30 minutes, flipping halfway through, until tender and caramelized.
  8. In a food processor, combine ricotta, olive oil, lemon zest or juice, and salt.
  9. Blend for 1โ€“2 minutes until smooth and fluffy.
  10. Spread whipped ricotta onto serving platter.
  11. Arrange roasted carrots on top.
  12. Garnish with fresh herbs, crushed nuts, red pepper flakes, honey drizzle, and lemon zest if desired.
  13. Serve warm or at room temperature.

Notes

Do not overcrowd the baking sheet to ensure caramelization. Drain ricotta if watery before whipping. Serve slightly warm for best texture and flavor contrast.
