Description
A cozy and rustic German potato soup made with tender potatoes, vegetables, and herbs, naturally thick and comforting, perfect for chilly nights.
Ingredients
- 2 tablespoons olive oil or butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 2 pounds potatoes, peeled and diced
- 6 cups vegetable or chicken broth
- 1 bay leaf
- 1 teaspoon dried marjoram or thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked smoked turkey sausage or chicken sausage (optional)
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil or butter in a large pot over medium heat.
- Add onion, carrots, and celery and cook until softened.
- Add garlic and cook briefly until fragrant.
- Stir in potatoes, bay leaf, marjoram or thyme, salt, and pepper.
- Pour in broth and bring to a gentle boil.
- Reduce heat, cover, and simmer until potatoes are very tender.
- Remove bay leaf and blend part of the soup until thick but still chunky.
- Stir in sausage if using and simmer to heat through.
- Taste and adjust seasoning before serving.
Notes
Do not overblend the soup. A slightly chunky texture is traditional and gives the best mouthfeel.
