Description

A cozy and rustic German potato soup made with tender potatoes, vegetables, and herbs, naturally thick and comforting, perfect for chilly nights.


Ingredients

  • 2 tablespoons olive oil or butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 pounds potatoes, peeled and diced
  • 6 cups vegetable or chicken broth
  • 1 bay leaf
  • 1 teaspoon dried marjoram or thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked smoked turkey sausage or chicken sausage (optional)
  • Fresh parsley, chopped, for garnish


Instructions

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add onion, carrots, and celery and cook until softened.
  3. Add garlic and cook briefly until fragrant.
  4. Stir in potatoes, bay leaf, marjoram or thyme, salt, and pepper.
  5. Pour in broth and bring to a gentle boil.
  6. Reduce heat, cover, and simmer until potatoes are very tender.
  7. Remove bay leaf and blend part of the soup until thick but still chunky.
  8. Stir in sausage if using and simmer to heat through.
  9. Taste and adjust seasoning before serving.

Notes

Do not overblend the soup. A slightly chunky texture is traditional and gives the best mouthfeel.
