Ingredients
- 2 cups all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup light brown sugar, packed
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- Red gel food coloring, to desired color
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 3 to 4 cups powdered sugar, sifted
Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Whisk together flour, cocoa powder, baking powder, and salt.
- Beat butter and brown sugar until light and fluffy.
- Add egg and vanilla extract and mix until combined.
- Mix in buttermilk and red food coloring.
- Gradually add dry ingredients and mix just until combined.
- Pipe batter into heart shapes or rounds on prepared baking sheets.
- Bake for 10 to 12 minutes until set, then cool completely.
- Beat cream cheese and butter until smooth.
- Add vanilla extract and powdered sugar and beat until thick.
- Pipe filling onto one cookie and sandwich with another.
Notes
Let cookies cool completely before filling. Chill assembled whoopie pies briefly for clean edges and easier handling.
