Description

Ingredients

  • 1 cup plain Greek yogurt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips or berries (optional)


Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC) and grease a mini muffin pan or line with mini paper liners.
  2. In a large bowl, whisk together Greek yogurt, sugar, eggs, oil, and vanilla extract until smooth.
  3. In a separate bowl, mix flour, baking powder, and salt.
  4. Add the dry ingredients to the wet ingredients and gently stir until just combined.
  5. Fold in any optional mix-ins if using.
  6. Fill each mini muffin cup about three-quarters full.
  7. Bake for 12โ€“15 minutes until lightly golden and a toothpick inserted comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring to a wire rack.
  9. Serve warm or at room temperature.

Notes
