Ingredients
- 1 cup plain Greek yogurt
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup vegetable oil
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips or berries (optional)
Instructions
- Preheat the oven to 350ยฐF (175ยฐC) and grease a mini muffin pan or line with mini paper liners.
- In a large bowl, whisk together Greek yogurt, sugar, eggs, oil, and vanilla extract until smooth.
- In a separate bowl, mix flour, baking powder, and salt.
- Add the dry ingredients to the wet ingredients and gently stir until just combined.
- Fold in any optional mix-ins if using.
- Fill each mini muffin cup about three-quarters full.
- Bake for 12โ15 minutes until lightly golden and a toothpick inserted comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring to a wire rack.
- Serve warm or at room temperature.
Notes
Do not overmix the batter to keep the muffins soft and tender. Mini muffins bake quickly, so check early for best results.
