Description

Greek Salad with Chicken is a fresh, wholesome, and satisfying meal made with juicy seasoned chicken, crisp vegetables, briny olives, creamy feta, and a classic Greek-style dressing. Perfect for lunch or dinner, this salad delivers wonderful Mediterranean flavor while staying light and filling.


Ingredients

  • pounds boneless, skinless chicken breasts
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 6 cups chopped romaine lettuce or mixed greens
  • 1½ cups cherry or grape tomatoes, halved
  • 1½ cups English cucumber, chopped
  • ½ cup thinly sliced red onion
  • ¾ cup Kalamata olives, pitted and halved
  • ¾ cup crumbled feta cheese
  • ⅓ cup extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper


Instructions

  1. Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add chicken and toss to coat evenly.
  3. Let chicken marinate for at least 10 minutes.
  4. Heat a grill pan or skillet over medium-high heat.
  5. Cook chicken 5–6 minutes per side until fully cooked.
  6. Remove from heat and let rest for 5 minutes.
  7. Slice chicken into strips.
  8. Whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, oregano, salt, and pepper.
  9. In a large bowl, combine lettuce, tomatoes, cucumber, red onion, and olives.
  10. Add sliced chicken and sprinkle with feta cheese.
  11. Drizzle with dressing and toss gently before serving.

Notes

Let the chicken rest before slicing to keep it juicy. Add dressing just before serving to keep the salad fresh and crisp.
