Description
These bold and comforting gochujang noodles are tossed with savory ground meat and a spicy-sweet Korean-inspired sauce that coats every bite. Quick to make, deeply flavorful, and perfect for busy weeknights or casual entertaining.
Ingredients
- 12 ounces rice noodles or wheat noodles
- 1 pound ground meat (beef, turkey, or chicken)
- 2 green onions, sliced
- Optional sesame seeds for garnish
- 1/4 cup gochujang paste
- 1/4 cup low-sodium soy sauce or tamari
- 2 tablespoons honey or brown sugar
- 2 tablespoons coconut cream
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 2 teaspoons tomato paste
- 2 tablespoons water
- 2 teaspoons minced garlic
- 1 teaspoon grated ginger
- Red pepper flakes to taste
Instructions
- Bring a large pot of salted water to a boil and cook noodles according to package directions until just tender.
- Drain noodles, toss lightly with oil or butter, and set aside.
- In a bowl, whisk together gochujang, soy sauce, honey or brown sugar, coconut cream, sesame oil, rice vinegar, tomato paste, water, garlic, ginger, and red pepper flakes.
- Heat a large skillet over medium-high heat and cook ground meat until browned and fully cooked.
- Drain excess fat if needed and reduce heat to medium.
- Add half of the sauce to the meat and simmer for 2 to 3 minutes.
- Add cooked noodles to the skillet and pour in remaining sauce.
- Toss everything together until noodles are evenly coated and heated through.
- Remove from heat and garnish with sliced green onions and sesame seeds.
- Serve immediately while hot.
Notes
Adjust spice level by reducing gochujang or red pepper flakes. Slightly undercook noodles to prevent them from becoming mushy when tossed with sauce.
