Description

This amazing garlic Parmesan focaccia bread recipe delivers a soft, airy crumb with crispy golden edges and a savory topping of garlic, olive oil, herbs, and Parmesan cheese. Perfect for beginners and bakery style results at home.


Ingredients

  • 2 cups all purpose flour or bread flour
  • 1 teaspoon kosher salt
  • 1 cup warm water (105 to 110°F)
  • 1 1/8 teaspoons instant yeast
  • 1/2 teaspoon granulated sugar
  • 2 tablespoons olive oil
  • 3 cloves garlic, finely minced
  • 2 to 3 tablespoons olive oil (topping)
  • 2/3 cup freshly grated Parmesan cheese
  • 1 1/2 teaspoons Italian seasoning
  • Flaked sea salt, to taste


Instructions

  1. Stir together flour and salt in a large bowl.
  2. Combine warm water, sugar, and yeast and let sit until slightly foamy.
  3. Add yeast mixture and olive oil to flour and stir until a sticky dough forms.
  4. Transfer dough to an oiled bowl, cover, and refrigerate for 8 hours or overnight.
  5. Let dough sit at room temperature for 30 minutes.
  6. Oil a 9×13 inch pan and gently stretch dough to fit.
  7. Cover and let rise for about 2 hours until puffy.
  8. Preheat oven to 425°F.
  9. Dimple dough with fingertips and drizzle with garlic olive oil.
  10. Top with Parmesan, Italian seasoning, and flaked sea salt.
  11. Bake for 22 to 24 minutes until golden brown.
  12. Cool slightly, slice, and serve warm.

Notes

Use plenty of olive oil and allow enough time for both rises to achieve the best texture and flavor.
