Ingredients

  • 1 pound fresh green beans, trimmed
  • 8 ounces mushrooms (button or cremini), sliced
  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh parsley or thyme (optional)
  • Lemon juice or red pepper flakes (optional)


Instructions

  1. Bring a pot of salted water to a boil.
  2. Add the green beans and cook until bright green and tender-crisp.
  3. Drain the green beans and set aside.
  4. Heat butter and olive oil in a large skillet over medium-high heat.
  5. Add the mushrooms in a single layer and cook until golden.
  6. Add the minced garlic and cook briefly until fragrant.
  7. Add the green beans to the skillet and toss to combine.
  8. Cook until everything is heated through.
  9. Season with salt and black pepper.
  10. Finish with fresh herbs or lemon juice if desired.

Notes

Avoid overcrowding the mushrooms so they brown properly and add garlic near the end to prevent burning.
