Fresh Greek Chicken Bowls are a vibrant and wholesome meal featuring juicy lemon garlic chicken, fresh vegetables, fluffy grains, and a creamy yogurt sauce, perfect for easy dinners or meal prep.


Ingredients

  • 1.5 lb boneless, skinless chicken breasts or thighs
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked white rice, brown rice, or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1/2 cup thinly sliced red onion
  • 1/4 cup chopped fresh parsley
  • 1 cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 small garlic clove, finely grated
  • 1/2 teaspoon dried dill or oregano
  • Salt to taste
  • Kalamata olives, optional
  • Crumbled feta cheese, optional
  • Roasted chickpeas, optional
  • Warm pita bread, optional


Instructions

  1. Combine olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and black pepper in a bowl.
  2. Add chicken and toss until fully coated.
  3. Cover and refrigerate for at least 30 minutes.
  4. Whisk together Greek yogurt, olive oil, lemon juice, garlic, dried dill, and salt.
  5. Cover and refrigerate yogurt sauce until ready to use.
  6. Cook rice or quinoa according to package instructions.
  7. Heat a skillet or grill pan over medium-high heat.
  8. Cook marinated chicken until golden and cooked through.
  9. Remove chicken and let rest before slicing.
  10. Chop cucumber, tomatoes, red onion, and parsley.
  11. Divide cooked grains between bowls.
  12. Top with sliced chicken and fresh vegetables.
  13. Drizzle with yogurt sauce.
  14. Add optional toppings if desired and serve.

Notes

Marinating the chicken adds the most flavor. Keep ingredients stored separately for the freshest meal prep bowls.
