Ingredients
- 1.5 lb boneless, skinless chicken breasts or thighs
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 4 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cooked white rice, brown rice, or quinoa
- 1 cup cherry tomatoes, halved
- 1 large cucumber, diced
- 1/2 cup thinly sliced red onion
- 1/4 cup chopped fresh parsley
- 1 cup plain Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 small garlic clove, finely grated
- 1/2 teaspoon dried dill or oregano
- Salt to taste
- Kalamata olives, optional
- Crumbled feta cheese, optional
- Roasted chickpeas, optional

Instructions
- Combine olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and black pepper in a bowl.
- Add chicken and toss until fully coated.
- Cover and refrigerate for at least 30 minutes.
- Whisk together Greek yogurt, olive oil, lemon juice, garlic, dried dill, and salt.
- Cover and refrigerate yogurt sauce until ready to use.
- Cook rice or quinoa according to package instructions.
- Heat a skillet or grill pan over medium-high heat.
- Cook marinated chicken until golden and cooked through.
- Remove chicken and let rest before slicing.
- Chop cucumber, tomatoes, red onion, and parsley.
- Divide cooked grains between bowls.
- Top with sliced chicken and fresh vegetables.
- Drizzle with yogurt sauce.
- Add optional toppings if desired and serve.
