Description

Santa Fe Chicken is a fresh and easy skillet dinner made with tender chicken, a creamy sauce, and bold Southwest-inspired flavors that come together perfectly for a family-friendly meal.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 tablespoon butter
  • 1 cup diced tomatoes with green chiles, drained
  • 3/4 cup heavy cream
  • 3/4 cup canned black beans, rinsed and drained
  • 3/4 cup corn kernels, canned or frozen
  • 1 cup shredded cheddar or Mexican blend cheese
  • Chopped fresh cilantro, optional
  • Sliced green onions, optional
  • Fresh lime wedges, optional


Instructions

  1. Slice chicken breasts in half lengthwise to create thinner cutlets.
  2. Season both sides with chili powder, cumin, garlic powder, onion powder, salt, and black pepper.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add chicken and cook until golden brown and cooked through.
  5. Remove chicken from the skillet and set aside.
  6. Reduce heat to medium and add butter to the skillet.
  7. Stir in diced tomatoes with green chiles, scraping up browned bits.
  8. Pour in heavy cream and stir until smooth.
  9. Add black beans and corn and simmer gently.
  10. Stir in shredded cheese until melted and creamy.
  11. Taste and adjust seasoning if needed.
  12. Return chicken to the skillet and spoon sauce over the top.
  13. Simmer until chicken is heated through and sauce has thickened.
  14. Garnish with cilantro, green onions, and lime wedges if desired.

Notes

Drain the tomatoes well to avoid a watery sauce and let the sauce simmer gently for the creamiest texture. This dish reheats well for leftovers.
