Description
This quick and flavorful Mexican shrimp dinner is made in one skillet with bold spices, fresh vegetables, and juicy shrimp for an easy weeknight meal.
Ingredients
- 1 1/4 lb large shrimp, peeled and deveined
- 2 teaspoons olive oil
- 1 small onion, chopped
- 1 red bell pepper, chopped
- 1 to 2 small jalapeño peppers, seeded and chopped
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- Fresh cilantro, chopped
- Lime wedges, for serving
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion, bell pepper, and jalapeño and cook until softened.
- Add the garlic, chili powder, cumin, coriander, salt, and black pepper and stir until fragrant.
- Add the shrimp in an even layer and cook for 1 to 2 minutes per side until pink and opaque.
- Remove from heat, garnish with fresh cilantro, squeeze lime juice over the top, and serve immediately.
Notes
Prep all ingredients before cooking since shrimp cook very quickly. Adjust jalapeño and spices to control the heat level.
