- 1 cup light brown sugar, packed
- 1 cup light corn syrup
- 4 large eggs
- 1/4 cup unsalted butter, melted
- 2 teaspoons pure vanilla extract
- 1/2 teaspoon salt
- 2 cups chopped pecans
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- Prepare the shortbread crust: In a large bowl, mix the melted butter, sugar, vanilla extract, and salt until combined. Add the flour and stir until a soft dough forms.
- Press the dough evenly into the prepared baking pan. Bake for 18–20 minutes or until lightly golden around the edges.
- While the crust bakes, make the pecan filling: In another bowl, whisk together the brown sugar, corn syrup, eggs, melted butter, vanilla extract, and salt until smooth. Stir in the chopped pecans.
- Pour the filling over the warm, partially baked crust. Spread evenly with a spatula.
- Bake for an additional 30–35 minutes, or until the filling is set and slightly browned on top.
- Cool completely in the pan on a wire rack. Once cooled, lift the bars out using the parchment overhang and cut into squares or rectangles.
