Description

These Homemade Easy Pecan Pie Bars are the perfect treat when you’re craving the rich, nutty flavors of traditional pecan pie without the fuss of making a pie crust. Featuring a buttery shortbread base topped with a gooey, caramelized pecan filling, these bars are sweet, crunchy, and irresistibly delicious. Perfect for holidays, potlucks, or anytime you want a quick, crowd-pleasing dessert.

Ingredients

Scale

For the Shortbread Crust:

  • 1 cup (2 sticks) unsalted butter, melted
  • 2/3 cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour

For the Pecan Pie Filling:

  • 1 cup light brown sugar, packed
  • 1 cup light corn syrup
  • 4 large eggs
  • 1/4 cup unsalted butter, melted
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon salt
  • 2 cups chopped pecans

Instructions

  • Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  • Prepare the shortbread crust: In a large bowl, mix the melted butter, sugar, vanilla extract, and salt until combined. Add the flour and stir until a soft dough forms.
  • Press the dough evenly into the prepared baking pan. Bake for 18–20 minutes or until lightly golden around the edges.
  • While the crust bakes, make the pecan filling: In another bowl, whisk together the brown sugar, corn syrup, eggs, melted butter, vanilla extract, and salt until smooth. Stir in the chopped pecans.
  • Pour the filling over the warm, partially baked crust. Spread evenly with a spatula.
  • Bake for an additional 30–35 minutes, or until the filling is set and slightly browned on top.
  • Cool completely in the pan on a wire rack. Once cooled, lift the bars out using the parchment overhang and cut into squares or rectangles.
  • Serve and enjoy!

Notes

  • For added flavor, toast the pecans before adding them to the filling.
  • Substitute maple syrup for corn syrup for a richer, deeper flavor.
  • Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
  • These bars freeze well—wrap them tightly and freeze for up to 2 months.
