Ingredients
- 2 medium zucchini, sliced into half-moons
- 1 can chickpeas, drained and rinsed
- 3 cloves garlic, freshly minced
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- Red pepper flakes (optional)
- Fresh parsley or basil for garnish (optional)
- Lemon juice or zest (optional)
Instructions
- Wash and slice the zucchini evenly and set aside.
- Drain and rinse the chickpeas, then pat them dry.
- Heat olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the chickpeas and cook for 4–5 minutes, stirring occasionally, until lightly golden.
- Add the sliced zucchini and stir to combine.
- Cook for 5–7 minutes until the zucchini is tender but still slightly crisp.
- Season with salt and black pepper to taste.
- Add red pepper flakes if using.
- Finish with lemon juice and fresh herbs if desired.
- Serve immediately.
Notes
Use a large skillet to avoid overcrowding and keep the zucchini from getting soggy. Finish with lemon juice for extra brightness.
