Description

Easy Zucchini Chickpea Stir-Fry is a fresh, simple, and wholesome one-skillet meal made with tender zucchini, hearty chickpeas, and fragrant garlic. It’s quick to prepare, full of flavor, and perfect for busy weeknights or light plant-based meals.


Ingredients

  • 2 medium zucchini, sliced into half-moons
  • 1 can chickpeas, drained and rinsed
  • 3 cloves garlic, freshly minced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes (optional)
  • Fresh parsley or basil for garnish (optional)
  • Lemon juice or zest (optional)


Instructions

  1. Wash and slice the zucchini evenly and set aside.
  2. Drain and rinse the chickpeas, then pat them dry.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Add the chickpeas and cook for 4–5 minutes, stirring occasionally, until lightly golden.
  6. Add the sliced zucchini and stir to combine.
  7. Cook for 5–7 minutes until the zucchini is tender but still slightly crisp.
  8. Season with salt and black pepper to taste.
  9. Add red pepper flakes if using.
  10. Finish with lemon juice and fresh herbs if desired.
  11. Serve immediately.

Notes

Use a large skillet to avoid overcrowding and keep the zucchini from getting soggy. Finish with lemon juice for extra brightness.
