Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 pound ground chicken or chicken sausage
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 cups chicken broth
  • 8 lasagna noodles, broken into bite-sized pieces
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried thyme
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3/4 cup ricotta cheese
  • Chopped parsley or basil, optional
  • Extra Parmesan cheese, optional


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and cook until softened.
  3. Stir in the garlic and cook until fragrant.
  4. Add the ground chicken, season with salt and pepper, and cook until browned.
  5. Pour in the chicken broth and stir in Italian seasoning and thyme.
  6. Bring to a gentle boil.
  7. Add the broken lasagna noodles.
  8. Simmer until noodles are tender.
  9. Lower the heat and stir in milk, heavy cream, and Parmesan cheese.
  10. Simmer gently until slightly thickened.
  11. Ladle into bowls and top with ricotta, herbs, and extra Parmesan if desired.

Notes

Stir occasionally to prevent noodles from sticking. Keep heat low after adding dairy to avoid curdling. Add extra broth or milk if the soup thickens too much.
