Ingredients
- 3 large eggs, beaten
- 2 cups cottage cheese
- 10 ounces frozen chopped spinach, thawed and very well drained
- 1/3 cup crumbled feta cheese
- 1/3 cup sweet onion, finely diced
- 1/4 cup unsalted butter, melted
- 2 tablespoons grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/8 teaspoon ground nutmeg
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 350°F and lightly grease a 9-inch baking dish.
- Squeeze the thawed spinach very well to remove excess moisture.
- In a large bowl, mix the eggs, cottage cheese, melted butter, garlic powder, nutmeg, and black pepper until smooth.
- Add the drained spinach, feta cheese, onion, and Parmesan cheese and mix until evenly combined.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake uncovered for 40 to 45 minutes, until set in the center and lightly golden on top.
- Remove from the oven and let rest for 5 to 10 minutes before slicing and serving.
Notes
Be sure to drain the spinach thoroughly to prevent excess moisture. Let the casserole rest before slicing so it holds its shape.
