Description

A creamy, comforting spinach and feta casserole made with simple ingredients, perfect for breakfast, brunch, or a light dinner. This easy dish is naturally gluten free, low carb, and packed with savory flavor.


Ingredients

  • 3 large eggs, beaten
  • 2 cups cottage cheese
  • 10 ounces frozen chopped spinach, thawed and very well drained
  • 1/3 cup crumbled feta cheese
  • 1/3 cup sweet onion, finely diced
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat the oven to 350°F and lightly grease a 9-inch baking dish.
  2. Squeeze the thawed spinach very well to remove excess moisture.
  3. In a large bowl, mix the eggs, cottage cheese, melted butter, garlic powder, nutmeg, and black pepper until smooth.
  4. Add the drained spinach, feta cheese, onion, and Parmesan cheese and mix until evenly combined.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake uncovered for 40 to 45 minutes, until set in the center and lightly golden on top.
  7. Remove from the oven and let rest for 5 to 10 minutes before slicing and serving.

Notes

Be sure to drain the spinach thoroughly to prevent excess moisture. Let the casserole rest before slicing so it holds its shape.
