Ingredients
- 4 boneless skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 2 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 3 tablespoons all purpose flour
- 2 cups low sodium chicken broth
- 1/2 cup heavy cream
- 1/2 teaspoon dried thyme
- Salt and black pepper, to taste
Instructions
- Season the chicken breasts evenly with salt, black pepper, garlic powder, onion powder, and paprika.
- Heat olive oil in a large skillet and sear the chicken on both sides until golden brown, then remove and set aside.
- Add butter to the skillet and cook the sliced onions until soft and lightly caramelized.
- Stir in the garlic and cook until fragrant.
- Sprinkle flour over the onions and cook while stirring to form a roux.
- Slowly pour in the chicken broth while stirring constantly.
- Stir in the heavy cream and dried thyme and let the gravy simmer until slightly thickened.
- Return the chicken to the skillet and spoon gravy over the top.
- Cover and simmer gently until the chicken is fully cooked and tender.
- Taste and adjust seasoning, then serve hot.

Slice thick chicken breasts into cutlets for even cooking and simmer gently to keep the chicken juicy and tender.
