Juicy pan seared chicken smothered in a rich, creamy onion gravy that comes together easily in one skillet for the ultimate comfort food dinner.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 3 tablespoons all purpose flour
  • 2 cups low sodium chicken broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon dried thyme
  • Salt and black pepper, to taste


Instructions

  1. Season the chicken breasts evenly with salt, black pepper, garlic powder, onion powder, and paprika.
  2. Heat olive oil in a large skillet and sear the chicken on both sides until golden brown, then remove and set aside.
  3. Add butter to the skillet and cook the sliced onions until soft and lightly caramelized.
  4. Stir in the garlic and cook until fragrant.
  5. Sprinkle flour over the onions and cook while stirring to form a roux.
  6. Slowly pour in the chicken broth while stirring constantly.
  7. Stir in the heavy cream and dried thyme and let the gravy simmer until slightly thickened.
  8. Return the chicken to the skillet and spoon gravy over the top.
  9. Cover and simmer gently until the chicken is fully cooked and tender.
  10. Taste and adjust seasoning, then serve hot.

Notes

Slice thick chicken breasts into cutlets for even cooking and simmer gently to keep the chicken juicy and tender.
