Ingredients
- 4 cups chicken broth
- 1 cup pastina pasta
- 1 large egg
- 1 tablespoon unsalted butter
- 1/4 cup finely grated Parmesan cheese
- Salt, to taste
- Black pepper, to taste
Instructions
- Bring the chicken broth to a gentle boil in a medium saucepan.
- Add the pastina and cook, stirring occasionally, until very tender.
- Beat the egg in a small bowl until fully blended.
- Lower the heat and slowly drizzle in the egg while stirring continuously.
- Cook briefly until the soup becomes silky and slightly thickened.
- Remove from heat and stir in the butter.
- Add the Parmesan cheese and mix until melted and creamy.
- Season with salt and black pepper to taste and serve warm.
Notes
Stir constantly when adding the egg to avoid scrambling. Add extra warm broth if the soup becomes too thick.
