Ingredients

  • 2 cans chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion or shallot, finely chopped
  • 3 cloves garlic, minced
  • 2 to 3 tablespoons harissa paste
  • 2 tablespoons tomato paste
  • ยพ cup cream or full-fat coconut milk
  • ยฝ cup vegetable broth
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes (optional)
  • Fresh parsley or basil, chopped
  • Lemon juice, to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion or shallot and cook until softened and lightly golden.
  3. Add minced garlic and cook briefly until fragrant.
  4. Stir in harissa paste and tomato paste and cook to bloom the flavors.
  5. Add chickpeas and stir to coat evenly.
  6. Pour in vegetable broth and cream or coconut milk.
  7. Reduce heat and simmer until the sauce thickens and becomes creamy.
  8. Season with salt and black pepper to taste.
  9. Remove from heat and finish with lemon juice.
  10. Garnish with fresh herbs and red pepper flakes before serving.

Notes

Adjust the amount of harissa depending on desired spice level. Coconut milk works well for a dairy-free version, and white beans can be used instead of chickpeas.
