Ingredients
- 2 cans chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 small onion or shallot, finely chopped
- 3 cloves garlic, minced
- 2 to 3 tablespoons harissa paste
- 2 tablespoons tomato paste
- ยพ cup cream or full-fat coconut milk
- ยฝ cup vegetable broth
- Salt, to taste
- Black pepper, to taste
- Red pepper flakes (optional)
- Fresh parsley or basil, chopped
- Lemon juice, to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion or shallot and cook until softened and lightly golden.
- Add minced garlic and cook briefly until fragrant.
- Stir in harissa paste and tomato paste and cook to bloom the flavors.
- Add chickpeas and stir to coat evenly.
- Pour in vegetable broth and cream or coconut milk.
- Reduce heat and simmer until the sauce thickens and becomes creamy.
- Season with salt and black pepper to taste.
- Remove from heat and finish with lemon juice.
- Garnish with fresh herbs and red pepper flakes before serving.
Notes
