Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 1/2 pounds boneless skinless chicken breast
  • 6 cups chicken broth, low sodium
  • 8 ounces cream cheese, softened and cubed
  • 1 1/2 cups shredded cheddar cheese
  • 1 packet ranch seasoning mix or 2 tablespoons homemade ranch seasoning
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 1 cup cooked and chopped turkey bacon or chicken bacon
  • 2 tablespoons chopped fresh parsley or green onions, optional


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add diced onion, carrots, and celery and cook until softened.
  3. Add minced garlic and cook until fragrant.
  4. Add chicken breasts to the pot.
  5. Pour in chicken broth.
  6. Stir in ranch seasoning and black pepper.
  7. Bring to a gentle boil, then reduce heat and simmer until chicken is cooked through.
  8. Remove chicken from the pot.
  9. Shred chicken into bite sized pieces.
  10. Return shredded chicken to the pot.
  11. Add cubed cream cheese and stir until melted and smooth.
  12. Stir in shredded cheddar cheese.
  13. Add chopped turkey bacon.
  14. Simmer until soup is creamy and well blended.
  15. Taste and adjust seasoning with salt if needed.
  16. Garnish with parsley or green onions if desired and serve warm.

Notes

Soften the cream cheese before adding and keep the heat low once dairy is added to ensure a smooth, creamy soup. This soup reheats well and is great for leftovers.
