Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon


Instructions

  1. Preheat the oven to 375°F (190°C) and grease a mini muffin pan or line with mini liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk the egg, milk, oil, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients and stir gently until just combined.
  5. Fill each mini muffin cup about three-quarters full with batter.
  6. Bake for 10–12 minutes until lightly golden and a toothpick inserted comes out clean.
  7. While muffins are warm, dip each one into melted butter.
  8. Roll the buttered muffins in the cinnamon sugar mixture until fully coated.
  9. Let cool slightly before serving.

Notes
