Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 large egg
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/4 cup unsalted butter, melted
- 1/2 cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon
Instructions
- Preheat the oven to 375°F (190°C) and grease a mini muffin pan or line with mini liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk the egg, milk, oil, and vanilla extract until smooth.
- Add the wet ingredients to the dry ingredients and stir gently until just combined.
- Fill each mini muffin cup about three-quarters full with batter.
- Bake for 10–12 minutes until lightly golden and a toothpick inserted comes out clean.
- While muffins are warm, dip each one into melted butter.
- Roll the buttered muffins in the cinnamon sugar mixture until fully coated.
- Let cool slightly before serving.
Notes
Coat the muffins while they are still warm so the cinnamon sugar sticks evenly. Avoid overmixing the batter for the fluffiest texture.
