Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 yellow onion, finely diced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 8 lasagna noodles, broken into bite-sized pieces
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 1 cup milk or half-and-half
- 4 oz cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 cups fresh spinach (optional)
Instructions
- Heat olive oil in a large pot over medium heat and sauté the diced onion until softened.
- Add garlic and cook briefly until fragrant.
- Add chicken breasts, Italian seasoning, salt, pepper, and chicken broth.
- Bring to a gentle simmer and cook until chicken is fully cooked.
- Remove chicken, shred with two forks, and set aside.
- Add broken lasagna noodles to the pot and cook until tender.
- Reduce heat to low and stir in milk or half-and-half.
- Add cream cheese and stir until fully melted and smooth.
- Return shredded chicken to the pot.
- Stir in Parmesan and mozzarella until melted.
- Add spinach if using and allow it to wilt.
- Taste, adjust seasoning, and serve hot.
Notes
For best texture, avoid overcooking the noodles. Add extra broth when reheating if the soup thickens.
