Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 yellow onion, finely diced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 8 lasagna noodles, broken into bite-sized pieces
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 1 cup milk or half-and-half
  • 4 oz cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups fresh spinach (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat and sauté the diced onion until softened.
  2. Add garlic and cook briefly until fragrant.
  3. Add chicken breasts, Italian seasoning, salt, pepper, and chicken broth.
  4. Bring to a gentle simmer and cook until chicken is fully cooked.
  5. Remove chicken, shred with two forks, and set aside.
  6. Add broken lasagna noodles to the pot and cook until tender.
  7. Reduce heat to low and stir in milk or half-and-half.
  8. Add cream cheese and stir until fully melted and smooth.
  9. Return shredded chicken to the pot.
  10. Stir in Parmesan and mozzarella until melted.
  11. Add spinach if using and allow it to wilt.
  12. Taste, adjust seasoning, and serve hot.

Notes

For best texture, avoid overcooking the noodles. Add extra broth when reheating if the soup thickens.
