Ingredients

  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth or vegetable broth
  • 1 cup heavy cream or half-and-half
  • 1 package (18 to 20 ounces) refrigerated three-cheese tortellini
  • 3 cups fresh spinach, roughly chopped
  • Salt and black pepper, to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until soft and translucent.
  3. Stir in the garlic and Italian seasoning and cook until fragrant.
  4. Add the crushed tomatoes and broth and stir to combine.
  5. Bring the soup to a gentle simmer and cook briefly.
